Tasmania trip (last minute as usual due to ever changing covid restrictions). Dinner at @institutpolairetasmania - amazing food with lots of Asian ingredients/flavours, and a great drinks selection (delicious cocktails!). Service was excellent - efficient and friendly.

Brioche bun, miso butter, laver oil: the bread was super soft as you'd expect from a brioche. The miso butter was very tasty!

Sea urchin, tamago, creme fraiche: I'm not normally a huge fan of sea urchin, but this was excellent. I think the tamago and the creme fraiche softened the sea urchin flavour and texture for me. Excellent dish.

Scallop sashimi, yuzu, white soy, sesame, lovage: these scallops were absolutely fantastic! I loved it.

Rock lobster cocktail (+99$) : we normally enjoy Chinese style lobster much more than western style, but this lobster was so good! Especially half of it is a whole piece of lobster meat, and the other half was made into a lobster salad. Very nicely done. Definitely it's something you should get if you're looking to splurge a little bit.

Burrata, apricot, mirin, coriander seed: lovely soft and gooey burrata, which worked really well with the tartness and sweetness of the apricot.

Homemade pasta: saffron handkerchief pasta, walnut butter, duck egg yolk. The pasta was nicely done. The duck egg yolk with the walnut butter was gloriously creamy and delicious! Super yummy.

Cape Grim eye fillet, pink eye, black garlic, with radicchio salad. This beef was perfectly cooked - rare and super tender. The flavours were nice and bold with the black garlic sauce. Amazing! The mashed potatoes was like a whipped texture - it was so soft and light! Never had anything like that before.

Dessert: Leatherwood honey panna cotta, spiced cherry. The panna cotta was very soft, and the flavour was delicate. The cherries were a nice touch. Nice way to end the meal.
Great cocktails and wine. Personally I wasn't that much of a fan of the food. I would go back again for cocktails but not the food unless the menu changes
Had the most amazing night here. We had been in Tasmania for two weeks and this was the highlight of our trip. Got served some beautiful wines by Lochy & incredible tasting triple aged brie. Catered to our gf options and were so nice to chat with. Thank you so much guys. Would highly recommend.
$5 oysters are not shucked to order. Dry and cold. Absolutely terrible for Hobart. Wines are average at best. We felt so ripped off at this place. Hated it, in fact.

Fabulous! Great cocktails & Lachie was so good! We loved the cocktail Masterclass. Great value for money. The food is totally delicious too… we ate it too quickly to take photos! Do it!
Every course of the chef's menu was incredible. Highly recommend the drinks match as well. A beautiful night out with lovely staff.
Absolutely superb. Freshest local ingredients. Portion size perfect in chefs menu and flavours perfectly balanced. Don’t go though because we don’t want it to get too popular!
Most amazing Japanese fusion restaurant. Better than our favourite restaurant in the Hunter which is a hatted restaurant. Sensational cocktails!
Just a short walk from Constitution dock where we are staying. The stand out of this restaurant is the staff knew where their produce came from. And the use of locally grown food was a plus. The superb tomatoes that tasted like the ones my mother grew as a child. The squid ink salume flavour with braised fennel was superb. I didn’t know Tasmania grew saffron - used in a saffron ravioli dish with peas and fava beans.
Delicious cocktails, worth a look in if you are in the area. I had the Salty Dog and my other half had a Manhattan.
Exceptional cocktails, wine and food. One of the best bars we've been to in Australia (and globally really). Loved the knowledgeable, friendly staff and stylish decor too! Will be back.
Lovely cocktail bar with friendly staff who gave us some good leads for restaurants in Hobart to check out. Cocktails never disappoint! Shame we didn't try the food as it looked amazing!

Owners are really into flavours and it come across in their drinks and food. Stop and have a chat with then if you get the chance.
Great sharing menu prepared with care. Nice and cosy and attentive wait staff. The bar was uncomfortably warm and stuffy on Valentine’s Day wished they had conditioning. Their cocktails are among the tastiest we’ve had as they tend to be hit and miss at other places we’ve been - these were delicious. Their rendition of beef tataki wasn’t what we expect as the beef were very cooked (expecting a much rawer rendition). The dish I least enjoyed was the butter poached leeks - I don’t imagined I’d ever pay 15-20 dollars for 1-2 slices of leek, but everything else was nice.
A great place for a pre-dinner drink - we enjoyed a breakfast martini and a salty dog cocktail on the recommendation of Lachie, one of the friendly bar staff. We also tried a few of the fresh Bruny Island oysters with yuzu sorbet, the sea urchin sashimi and shell-on scallops, all of which were delicious! The Simla field blend white wine was also a great accompaniment to the appetisers. Thanks to Lachie for the bar and restaurant recommendations as well, they worked out perfectly overall Institut Polaire has friendly staff, delicious cocktails (prepared in front of you), tasty appetisers and a welcoming atmosphere, thanks guys!
