Such a great, informative day! No matter how good you think you are at BBQing you'll definitely walk away changing something or trying something new, not to mention the mammoth feast, on tap beer and super friendly and interactive BBQ crew. Thanks guys

Went to the charcoal fundamentals course in Feb and absolutely loved it. Highly recommend. Was a great day with the lads, had a few beers and ate some amazing meats all cooked in front of you. There was so much information to digest but the notes sent out were super helpful. Will be back again! The burger was to die for!

Amazing experience. Gus and the team are super knowledgeable. Lots of tips and tricks on what to do and more importantly what not to do and what is actually not important that you might hear a lot of. The food. The food. Cannot explain. If you're new to smoking or have a bit of experience under your belt then it's definately the course for you, or if you just wanna eat haha it's say it's aimed at people who have a lil experience and it helps clear out all the myths. I don't smoke at all and even I thoroughly enjoyed it. So good

** edit: one week later, all four of us are still waiting on the bbq notes emails which I could reply to as requested by the owner in the comments, if I knew the email address **

I went to Perth BBQ School last Sunday for a Fundamentals of Charcoal class and after almost two months of anticipation and excitement waiting for the day, myself and three friends left there feeling disappointed and ripped off. The raving reviews about Gus might be true, but we had an instructor who struggled to make any sense and left us waiting for long periods (think two hours while meat cooked with no class interaction). There was no real direct instruction and no opportunity to actually cook, apart from some people made burger patties from mince. Questions were answered with disdain and didn’t make much sense. Other cooking schools actually get you involved rather than just hanging around waiting for six hours for meat to cook. At the end of the day, while everyone was eating, the instructor shouted goodbye and left - ten minutes later we saw him in the car park sitting in his car. We thought we were the only ones who couldn’t wait for the day to be over but it seemed the instructor felt the same way too.
Let’s now talk about the state of the venue - it felt unsanitary. Rubbish was piled up inside and out which was an unappetising mess. The toilet (filthy at the beginning of the day) was right next to the kitchen. The outdoor area wasn’t much better with rubbish piled up and cobwebs on bbq’s.
To sum up, to pay $175 each for such an abysmal class in a filthy venue felt like robbery. Next time we’ll take our $700 and head to the local butcher, get some sides (do you know what they are?) and watch “Smoking Dad BBQ” on YouTube for some real BBQ tips because that would be a much better investment in our time and money.

I have done a couple of the courses on offer here and they are always super informative and a lot of fun. The prices are outstanding given the content and the size of the feast at the end of the classes. Gus is hilarious and knowledgeable. I will attend again. My only gripe is that the classes sell out so fast!

Third time at this class and it's always a blast. Watching everyone react to all the food and tips they learn is always so satisfying. 10/10 recommend

Edit: Have been to the school so below response is not correct. We had a bad experience with one of the staff there (group of 8 of us all thought the same).

Charcoal BBQ Fundamentals class.

Disclaimer: We didn't have the owner as our instructor. Either make sure you get him or put your $175 towards a Weber/BBQ and watch 5 minutes of YouTube. You'll get more out of it than if you're unlucky enough to get the instructor we had, he was very unhelpful. Almost all of our questions were answered with a snarky non-reply by the instructor which after the first two times pretty much shut down anyone asking anything else for the rest of the day. We also got a bonus 20 minute monologue from the instructor about how "rosemary doesn't add any flavour to meat" and other wacky subjective untested theories.

On the food: well you don't get hands on and you don't see the preparation for anything other than some chicken wings and burger patties - again if you took $40 and bought some meat and watched YouTube you'd have a much more educational experience. After the class you get emailed a 9 page pdf which doesn't have half of the recipes you couldn't ask questions about. If you're looking for an actual "class" and want to learn something then this isn't the place, go read SeriousEats instead. If you've made a roast chicken before then you're too advanced for this class. I will give them credit, the food is good, but that doesn't count for much as this is meant to be a class where you learn to make it, not a restaurant where you just eat it. It's like showing someone a painting and calling it an 'art class'.

The place is also dirty. There is rubbish everywhere and pretty unsanitary for a "kitchen".

Ten of us went and we won't be going back. The only saving grace was being able to have a few drinks with mates and meet some good people in the class. But if we wanted to do that we would've bought a few cartons and had a BBQ at home and saved $150 each. I think this place preys on people who are buying "bloke gifts" or dudes who have watched too much Action Bronson and haven't spent much time actually cooking.

Great day learning many handy tips and tricks. They keep everything in perspective and relative to the backyard charcoal warrior in us by using equipment and techniques we would use at home. My only complaint is the courses book-out too quickly, clearly they are doing something right.

Absolutely one of thee best BBQ schools I have been to, Gus has forgotten more things about BBQ than I thought I knew.
Excellent presentation and a no bull type attitude to how things should be done. Back to basics and forget about all the modern technology out there that just confuses you and makes it more complicated. If there was a six star rating I would be ticking that.
It would be a great event for teams at work to get together, learn something and have loads of fun whilst doing it.
I would pay to do the course again just for the atmosphere and the great food, well worth it.

A big thanks to Gus and his team for teaching me how to cook on the Weber kettle, I am now addicted to cooking on coals and my wife is happy not having to use the oven anymore.

Perth BBQ School’s Charcoal Fundamentals changed my life forever! Gus was fantastic in delivering the course and is the font of knowledge on all things BBQ. I learned a raft of new skills on the day and built the confidence to try out new things on the Weber at home. I am evangelical about this course and would recommend to anyone regardless of skill level.except vegos and vegans.
