Great cocktails and huge selection of boutique spirits with a lovely atmosphere. Nikki really knew her cocktails and we would happily return just to nerd out about recipe ideas with her again

Took ages to get a drink. And then probably 40 minutes to get a charcuterie board. (Wish I could add the photo I took!) I was one of 5 people in the restaurant, three staff on, we were given a cheese knife not sure what that was for as there was no cheese (4 small slices of bread some ham, prosciutto. About 10 olives and some slices of pickled cucumber). Overall this was a really awful experience given that this is supposed to be a flash place in Hobart, I think Mac one is overrated all talk no substance

Went last night with my partner as we we're staying at the Macq01 Hotel.
The atmosphere was very inviting and we were seated quickly.
Didn't take us long to decide what food and drinks we were going to have but after waiting around 20 minutes for someone to take our order we got up and left.

Around us there were only two tables and a small group doing a whiskey tasting, it definitely wasn't a busy night.
We've seen staff cleaning empty tables, and chatting just behind us, but nobody seemed to care for us.
As we left and looked back, they'd already cleared the menus off our table.

Pretty lame.

Good drinks, the service not so much. Took over 40 minutes for our plates to be cleared and we had to approach the bar for extra drinks despite clearly being done with our current ones and it not being busy. Disappointing, especially given the price we paid for our night out. Won't come back in a hurry. Selection is good which is their only saving grace.

Increíble place to enjoy good gf meals, and to enjoy the cocktails and the cool place. I ate the biggest and delicious gluten free hamburger, I woul come back to Evolve Spirits any time!

Had a wonderful experience trying out the suntory whisky spirit flight & the spring bay distillery spirit flight. Exceptional customer service by Adrian, Dana who shared their knowledge. Thank you guys for an amazing experience

Proper mixologists. Awesome cocktails. An insane list of spirits. Tasty food. Interesting decor. Everything was fantastic.

An experience for the whisky connoisseur. The service is excellent and the menu is the most extensive I've ever seen. Highly recommended.

Its a 'must go' whisky bar when you are in Hobart. Its like whisky wikipedia, also got a variety of gin, cocktails. The decoration is also quite unique.

Fantastic atmosphere, cool concept, great drinks, but the food was a little less exciting. Underwhelmed by the food, but we would recommend coming for a drink or three - the cocktail list was a rippa.

Servic is impeccable, love the atmosphere, got the vintage rouge and was a great end of the night drink.

Our go to cocktail bar, attached to the MAC01 hotel lobby, however cool views and funky surrounds.

Unique design with lots of fossils and skeletons throughout the bar. Being part of Macq01, prices are on the higher side. Service was good and we really enjoyed our Apple and Quince ciders.

Our favorite night time activity in Hobart. Have a flight try some fun new spirits and keep the arancini balls coming. Amazingly well decorated and comfortable bar

This was a great experience. We only stayed for drinks and a round or two of 500 (our cards)
We stumbled across this establishment after a big day out, and it was great to unwind, low lighting soft plush seats and a HUGE whiskey selection. I loved the prehistoric collections spread about, it's very engaging.

What an amazing Location. Such a Warm and inviting Lounge. So much history within. The staff were on point, the Drinks were divine and the choices were never ending. There is a reason why Evolve wins so many awards. Can't wait to return

Fantastic spirits bar in Hobart with an amazing selection of Tassie Whiskeys. The team is absolutely delightful and very polite especially Eden, Megan and Adrian are the staff who served us. Great young people with good whiskey knowledge.

It's OK. They try, but as good as the place looks, they can't quite pull it off. It's has the trendy young staff with the right look, but needs a proper, experienced hand on the tiller. I've been a few times now and it's always the same story.

It's definitely well-located, and it's certainly not bad, but it's not living up to its potential.

Enjoyed the cosy atmosphere and unique decor, the only downside was the recommended cocktail was not to my liking.
